The oldest market in Rome is found in the Campo dei Fiori and dazzles with vibrant displays of fish, fruits and vegetables, spices, wine, flowers and kitchen items.  There are stands selling wonderful spice/herb combinations for Italian dishes that make excellent gifts (and that will perfume your luggage on the trip home).  The vendor will write the name of the spices on each plastic bag in English or Italian.
